Yes. This curry is yellow in color because it has lot of turmeric and the main ingredient of the curry is POTATO. We call in India as POTTTATTTTO but in US it is POTTETO. Whatsoever it is an eatable adventitious root and it maked good curry and many of the American dishes too. Sorry, I am a nikampoop when comes to American dishes. Not because I have hatred for it. I dont know many of them out there. Burger, Pizza, Sandwich, Mashed Potato with something and a few I have eaten but no idea about it. I like most of the American, Italian, Chinese and Mexican food. But all vegetarian as I am one of those luckiest to be. I will talk about that later.
Okey, let us come back to the topic. Yellow Potato curry. My friend and room mate Sujith (Left) make best vegetarian curries of Kerala (India). Sujith completed fellowship in IIT, Mumbay before coming to the US. I learned i make a good amount of Kerala curries from him. I also learned to make this curry and made it without Onion (which is an active ingredient of this curry) at my brother's home. There is a substitute for onion, Cabage. Yes Cabage can create the crispy feeling that Onion has and we make the curry closer to the one which is made with onion if we do it in a moderate way. Ginger, Mustard, Curry leaves, Green Chilly and Turmeric dominates on other ingredients and taste Ahhhhhhhh!... Zing....................... when served with Roti, Pulka or Chapathi. Let me know.
